You never ate a 28 day matured steak? Game like pheasants especially are usually hung for a few days to improve the flavour of the meat. The Japanese at this point were still mostly pescatarian, and regarded the eating of meat as disgusting and unacceptable in society - but obviously nobody, not even Buntaro, would be so rude as to tell Anjin-sama this, and imply he'd done something wrong. Not only did they not approve of his attempts at replicating the cooking he was used to, but he was essentially trying to get them to eat something that physically revolted them.

So about the bird, I looked this up because I was confused as well. So hanging a bird out for a few days was something done (and still done) to birds that are old and wild to soften the meat and make it less tough. However from the pictures ive seen it is almost never allowed to get to the state we see in the show, which I think is a combination of dramatic license and them all being too distracted with everything to take it down
