Sanderson's books are great, and his various Cosmere books cover a lot of different sci-fi/fantasy niches. As for his mormonism: He has stated he is in favour of gay marriage (including that he believes the church should allow it) and supports trans rights and identities. The Stormlight books have gay, bi, and ace characters, and there's at least one trans character.

Consider checking out the "Destroyermen" series of novels by Taylor Anderson. WWII coal powered destroyer gets sent to an alternate Earth with evolved velociraptors and lemurr-cat people using sailing technology. It gets weirder from there. Fun, though.
