It can add some interesting content. Say, people typically aren't used to fighting left-handed opponents. And perhaps, that's what saved William in the first encounters against the Beastkin Prince.

I am not sure if it was specified. But I imagine it'd be written if he was left-handed, cause that's pretty rare. Also that should've affected all duels with William present, as that changes dynamics of the battles.
