I write the date on the jar. Its easier to clean off with soap and a green scrubby.
I have been dehydrating the shredded potatoes that I buy frozen from the grocery store. I dehydrate them in my Excalibur 9-tray machine. They dry FAST. All I do is put them (after drying) into the 1/2 gallon Ball canning jars. They DO keep for several years. I have been getting about 6 years out of mine. Only because I haven't opened any others. Great video! Thanks, AP
