I think the de-aging works because it means the characters in the film, even in their prime, look like crippled old men. The Irishmen never depicts the life as glamorous- even at the peak, it's just a bunch of old men sitting in rooms and killing each other. It's his most bleak mob film by far, and I think the de-aging accentuates that very well.
